At our shop we use spot process color separation software, which can get up there in colors if you're going for alot of color accuracy. I think most prefer to do it themselves. I know I do! I had one client/artist that insisted on using his seps even though I knew they wouldn't work. So we did a sample with his seps, and a sample with mine.
